Carrot Ginger Velouté

A friend from India taught me the recipe for this

spicy soup; it is delicious and super healthy.

What you need:

• 2 cups of peeled and cut carrots

• 1 teaspoon of peeled and cut ginger

• 1 tablespoon of chopped onion or shallot

• 2 tablespoons of olive oil

• Salt and black pepper to taste

How to make it: In a pot with water, place

peeled pieces of carrot, onion and ginger, and

cook until very soft. Then take out the pieces

of carrots and onions and put them a blender

with the olive oil and a bit of the water they

were cooked in. Blend until you get a creamy,

smooth consistency. Add salt and pepper to

taste.

Tip: Serve in a bowl and decorate with slices of

ginger. You can replace the onion for garlic if

you prefer a more garlicky taste.
